Beef In Onion Gravy

I made this yesterday. DELISH! It was fast and easy and so good! Just enough for my family with a few leftovers for lunch today! Wyatt also suggested that we put mushrooms in it for next time. 

Beef in onion gravy:

1 can cream of mushroom soup

2 tbsp onion soup mix

2 tbsp beef broth

1 tbsp quick cooking tapioca

1 lbs beef stew meat

In slow cooker, combine  soup, soup mix, broth, and tapioca; let stand 15 min. Stir in the beef. Cover and cook on low for 6-8 hours or until meat is tender. Serve over noodles, mashed potatoes, or rice.  (We chose rice!)

Yeilds: 3 servings ( I suggest you double / triple it!)

Dilled Pot Roast

This recipe is AWESOME! We loved it here anyways!

2 tsp dill weed

1 tsp salt

1/4 tsp pepper

1 boneless chuck roast (2-1/2 lbs)

1/4 c water

1 tbsp cider vinegar

3 tbsp flour

1/4 c cold water

1 c (8oz) sour cream

1/2 tsp browning sauce (optional)

hot cooked rice

In a small bowl combine 1 tsp dill, salt, and pepper. Sprinkle over both sides of roast. Place in a 3 qt slow cooker. Add water and vinegar. Cover and cook on low for 7-8 hours or until meat is tender. *note: my crock pot is very hot, and cooked it a lot faster, so depending on the temperature of yours you  may want to decrease the cooking time* Remove meat and keep warm.

In a small bowl combine flour and remaining dill; stir in cold water until smooth. Gradually stir into slow cooker. Cover and cook on high for 30 mins or until thick. *note: again, time may vary with temperature of cooker*

stir in sour cream and browning sauce if desired. *note: I didn't use browning sauce, I don't know what it is, but it still turned out fabulouso!* heat through. Slice meat. Serve with sour cream sauce and rice. 

Yield:6-8 servings.

Another reason why I love my Hubby!

The other day Wyatt decided to make dinner. I'm not going to complain! I enjoy when he cooks! He made this chicken dish! It was AWESOME! And he even made it up!

It was delicious! I believe he used:
1can of cream of chicken soup,
can of milk,
1/4 c whipping cream,
some random spices to make it taste yummy *he used cayenne pepper, which made it hot, but still very delicious!*
fresh mushrooms cut up

Then baked at 350 for 1 1/2 hours....We used little chicken strips, so you might have to modify how long you cook it if you are using chicken breasts or not!

He then served it over rice. It was AWESOME. NO joke. Come to my house and you will eat well!

Chicken Pot Pies

Chicken Pot Pie

1 c diced potato
1 c onion
1 c celery
1 c chopped carrot
1/3 c melted margarine
1/2 c flour
2 c chicken broth
1 c half and half
1 tsp salt
1/4 tsp pepper
4 c cooked chicken-diced
2 pie crusts

Preheat oven to 400.

Saute onion, celery, carrots, potatoes in butter for 10 min.
Add flour to sauteed mix stirring well. Cook for 1 min stirring constantly. Combine chicken broth and half and half. Gradually stir into vegetable mixture. Cook over medium heat stirring constantly until thick and bubbly.

Stir in salt and pepper. Add chicken and stir well. Pour in shallow 2 quart dish and top with pie shells.

*I added peas because I love them. I added them when I added the chicken. It was AWESOME! Except that we are going to have pot pies for the rest of the week. I suggest you half the recipe.*
